The Ultimate Macaroni and Cheese

There’s nothing quite like homemade mac and cheese…num num num.  Sophia absolutely loves this mac and cheese recipe and I make it regularly for her as a treat (and because I love it too).  This is by no-means a healthy meal, but sometimes you just need a bit of comfort food.  Go on, treat yourselves!

Ingredients  (As always, try to use organic ingredients)

2 1/2 Cups (190g or 6 3/4 oz) Dry Pasta

1 1/3 Cup (325 ml or 11 fl. oz) Milk

1 1/2 tbsp (21g or 3/4 oz) Butter

2 tbsp (18g or 5/8 oz) Flour

1 tsp Smoked Paprika

1/2 tsp Ground Pepper

1 tsp Salt + Pinch of Salt for cooking pasta

1 1/3 Cup (135g or 4 3/4 oz) Grated Cheddar Cheese


In a large pan, cook the pasta with boiling water (I just cheat and boil the kettle first) and a pinch of salt.  This usually takes about 10 minutes – you are just aiming for the pasta to be al dente as it will keep cooking once it is in the oven.  Once the pasta is cooked, drain and set aside.

Whilst the pasta is cooking, you can start making the cheese sauce.  Heat the milk in the microwave (I use a glass measuring jug and pop the milk on for 2 minutes).  Melt the butter in a large pan.  Once the butter is melted, take the pan off the heat and stir in the flour with a wooden spoon (if it is too lumpy then use a whisk).  Return the pan to the heat and continue stirring the butter/flour for about 1 minute.  Then add the milk.  Keep stirring the mixture to break up any lumps – if the lumps are really bad then use the whisk again.  After about 3 minutes, the sauce will have thickened.

Season the sauce with the smoked paprika, ground pepper and remaining salt.  Add 1 cup (115g) of grated cheese to the sauce and stir until melted.

Once the pasta is cooked, add the pasta to the cheese sauce and mix thoroughly.

Lightly oil a small oven dish (I use spray canola oil and then remove the excess with a paper towel).  Transfer the pasta/cheese sauce mixture to the oven dish.  Sprinkle the remaining cheese (1/3 cup or 20g) over the top of the pasta.

Pre-heat the oven to 350°F (190°C).  Bake the macaroni cheese for 15 minutes.
