Blueberry Pancakes

Blueberry Pancakes

We are big fans of a cheeky pancake on a lazy Sunday morning or Sunday brunch.  This also makes a great treat for a snack (Sophia loves pancakes) or a dessert.  This recipe makes 2 large pancakes (the size of a dinner plate) – 1 for Simon and 1 for me to share with Sophia.  You can easily double this recipe to make 4 pancakes, or make smaller normal size pancakes rather than the giant dinner plates LOL!

Ingredients  (As always, try to use organic ingredients)

1 Cup (150g or 5 1/2 oz) Flour

1 ½ tsp Baking Powder

2 tbsp (28g or 1 oz)Sugar

½ Cup (120 ml or 4 fl. oz) Whole Milk

2 Eggs

½ tsp Vanilla Extract

2 tbsp (28g or 1oz) Butter

2 Handfuls of Blueberries

Maple Syrup



Add the flour, baking powder and sugar to a stand-mixer and combine.

Add the milk, egg and vanilla extract into the stand-mixer, but do not mix with the dry ingredients yet.

Melt the butter in the pan that you are going to use to cook the pancakes.  Once melted, tip the melted butter into the stand-mixer with the rest of the ingredients.  With a folded up paper towel (be careful not to burn your fingers), grease the pancake pan with the remnants of the melted butter that are left in the pan.

Combine all ingredients in the stand-mixer together into a smooth batter.  Make sure to scrape down the sides and bottom of the stand-mixer so no lumps of flour remain.

Place half the batter (about a full ladle and a smidge more of batter….I’m very precise with my baking LOL!) into the greased pancake pan.  Wiggle out the batter to cover the full pan.  Add a handful of blueberries to the batter.  Cook on a medium heat.  Once bubbles start to appear at the top of the pancake, use a knife to lift up one side to check that the bottom is golden brown.  Once the bottom of the pancake is golden brown, flip the pancake to cook the other side.

Serve straight away with maple syrup….num num num.  If you can’t manage to eat the whole pancake then it is great later on in the day as a snack!

Alternative Toppings: If you prefer plain pancakes then just skip out the blueberry addition.  Other options are to switch out blueberries for strawberries (cut into thin slices) or chocolate chips.  If you can’t decide on which topping to try then go with all of them (I usually have 1/3 blueberry, 2/3 plain)!
